How I heard of this place: Within one week, it was highly recommended by three (not one, but three) of my friends that 8oz be at the top of my burger list in Seattle. “Best burger in Seattle!” is all anyone had to say; and three people swore it. Challenge accepted.

Type of cuisine: Opened in 2011 by Chef Kevin Chung, 8oz Burger & Co has become a local favorite for burger lovers’ in the Seattle area. Located in Capitol Hill and Ballard, this foodie destination redefines the hamburger one bite at a time.

Keeping in mind the foundation of a delicious burger, the focus is on the quality of the meat and bun while incorporating creative and delicious accompaniments to complement each burger. With over 16 burgers to choose from, there are plenty of options to suite every flavor profile.

This family friendly neighborhood spot also offers a full bar with local drafts, hand crafted cocktails, and over 50 whiskeys. Set in a modern-rustic interior, this old-meets-new environment offers patrons a comfortable and welcoming place to dine.

Ambiance: Comfort. Tradition. Old West. From the Seattle Times, “It seems a little odd that an upscale burger joint with locations only in Los Angeles International Airport, Miami and a couple of casinos would set up shop in decidedly un-glitzy Seattle, but that’s just where 8 oz. Burger Bar, the brainchild of star L.A. chef Govind Armstrong, has landed.

The burgers are grilled over live Texas oak, giving them a distinctive smokiness. But what makes this restaurant even more special are the stylish surroundings and an attention to detail….

Dimly lit and sharply designed with reclaimed Wisconsin barnwood, metal and vintage curios, 8 oz. is a bit a of a mashup, fusing hip bistro with rustic sports bar.

What I ordered: Having thoroughly studied the menu for a couple of days, leading up to our dinner date, I knew immediately that the Short Rib Poutine ($11) – kennebec fries, house gravy, mozzarella – was to establish first things first. It was all it is cracked up to be.

Our dining companions selected the Mac & Cheese ($7) with Beecher’s cheese and cinnamon.

For dinner, mine was the well-studied and planned burger: The Union ($11), an espresso rubbed patty with arugula, fried shallots, candied bacon, gorgonzola and peppercorn aioli.

My husband chose The Jackson ($12), the house-blend patty made from naturally raised, antibiotic-free, hormone-free, 100% local black angus from Open Prairie in Pasco, served on a freshly baked 100% organic brioche bun from a local bakery, topped with frise, charred onions, braised pork belly, gouda, smoked bacon mayo, and BBQ sauce.

Our dining companions enjoyed The 8oz. ($13), the signature burger with arugula, balsamic onions, hills bacon, Beechers flagship cheddar, truffle aioli; IPA Onion Rings ($4) on the side,

and The Classic ($10) with tomato, onion, pickle, craft white American cheese, and 8 oz. special sauce, and a small basket of Kennebec fries ($2.50).

A strawberry shake ($6) and an Orange Creamsicle Float ($6), a local orange soda and vanilla ice cream helped complete the meal.

What I loved: The short rib poutine was the favorite – among most all of us. Of the burgers, the 8oz signature burger held my attention more than any other.

Why I loved it: Simple food made glamorous, completely satisfying and finger-lickin’ good through the last bite!

Cost: High ($10 – $15 per burger, sides extra)
